You can add a little extra protein powder to these to make it more a a fitness food or protein bar replacement.
1/2 cup pitted dates
2 cups cooked chick peas
1/2 cup organic unsalted peanut butter
2 teaspoons vanilla
2-3 tablespoons vanilla pea protein powder
2 tablespoons extra virgin coconut oil, melted if hardened
Stevia powder, to taste
1/2 cup chocolate chips (large chips are shown, but mini chips or chopped chocolate works out the best for when you are eating them very cold)
Line a 9x9-inch pan with parchment paper. Put dates in a food processor; process until well mashed. Add remaining ingredients, except for chocolate chips. Stir in half of the chocolate chips. Spread mixture into prepared pan. Press remaining chips into the top.
