If you've never had yeast cheese, now is the time to try this alternative cheesy tasting product. I love real cheese, but i ultimately like to have a healthy varied diet. The vegetarian side of me (I used to ba a vegetarian) loves to still eat meals like this for the health-boosting vitamin content. the nutritional profile for nutritional yeast is excellent for those who do not eat mush or any meat and need B-12. So, It's not that I don't like cheese. It's not that my kids can't eat cheese It's not that I can't go buy grass-fed raw organic cheese (because I often do), butter and milk. I just don't want to(all the time). I want less dairy I want more nutritional foods I want to beat the system; to be different, to feel good after I eat and not full of congesting food.
1 pound whole grain elbows pasta
1 cup water
1/2 cup nutritional yeast
1/4 cup organic corn starch
1 teaspoon dry mustard
1/4 teaspoon turmeric
1 teaspoon onion powder
1 cup cashew or almond milk
1/4 cup avocado oil
1 teaspoon dried parsley
Smoked paprika
1/3 cup freshly shredded raw grass fed cheddar (optional)
Preheat oven to 350 degrees.
Cook pasta according to package directions. Drain.
Make sauce: Whisk yeast, cornstarch, dry mustard, turmeric, and onion powder into water in a small saucepan set over medium heat. Cook, stirring constantly until it thickens and is bubbly. Remove from heat, whisk in oil and milk. Cook again until thick and bubbly.
Coat a 13 x 9 inch baking pan with healthy nonstick cooking spray. Transfer cooked pasta to pan; stir sauce thoroughly into pasta. Sprinkle with parsley, paprika, and cheddar cheese, if using. Bake, covered with foil, for 10-15 minutes of until hot.
