This recipe was inspired by Tropical Traditions, an online store and website dedicated mainly to coconut. I love the addition of coconut flour to gluten-free flour mixes for the fiber and texture.
Makes 6 cups
4 cups gluten free flour (preferably brown rice flour)(Bob Red’s Mill all-purpose gluten-free flour or a mixture works well also)
1 1/3 cups tapioca flour
2/3 cup coconut flour
1 teaspoon xanthan gum
Mix flours and xanthan gum in a large bowl. Store in sealed container or bag. Use in recipes.
