You can use your favorite recipe or this one. Choose whole grain bread, quality eggs and milk.

Organic ghee 12 slices sprouted grain bread 4 eggs 3/4 cup almond or oat milk 1/4 teaspoon cinnamon plus more for dusting 1/4 teaspoon cardamom Pinch nutmeg 1 teaspoon vanilla 12 teaspoons maple syrup
Heat oven to 375 degrees. Coat muffin pan cups with cooking spray, then grease with a little ghee for flavor. Beat eggs with milk, spices, and vanilla. Cut each slice of bread into 4 strips. Coat well in egg mixture. Twirl the pieces to fit into the cups, so there are no huge gaps. Drizzle a teaspoon of maple syrup into the center of each one--no worries if it spills over. Dust tops with cinnamon. Bake 10 minutes.
