Find the egg poaching pan at Amazon or large kitchen stores. Serves 2
1 avocado, cut in half, pit removed
2 organic or cage free omega-3 eggs eggs
2 handfuls of mixed greens
Few sliced red onion
Balsamic vinegar
Extra virgin olive oil
Gomasio
Organic grape or cherry tomatoes or sliced tomatoes
Freshly ground black pepper
2-4 slices sprouted grain bread. (I like Alvarado Street, salt free)

Boil water for your poached egg using an egg poaching pan or by dropping egg into simmering water with a little vinegar. Cook to your liking and remove with a slotted spoon. Arrange some greens, onion and tomatoes on the sides of two serving plates. Cut egg in half and place in the center of each avocado half. Put remaining egg halves on plates aside salad. Sprinkle avocado and egg halves with gomasio. Drizzle balsamic vinegar and olive oil over the salad. Season with freshly ground pepper, to taste. Serve with sprouted grain bread.
