Funny that I'm not a coffee drinker per say, but once the warm weather hits, I love to drag out the coffee maker and my Trader Joes organic beans, grin 'em up real fine and make a nice strong pot (usually a half a pot) of coffee. I let it get cool and then refrigerate it until cold for iced coffee whenever I want it. The addition of cashews is as you may have guessed----in place of milk. Whirl them in a blender and they become milky so why not whirl them with the coffee? That's what I said. So here's my recipe: enjoy!
8-10 oz.cold and strong organic decaf French roast
2 TB cashews
1 cup ice
Cinnamon
Cocoa powder
Stevia powder
Put the coffee and cashews into a blender; pulverize for about one minute or until liquid and no cashew bits are remaining. Put ice into a tall glass; pour in the coffee; enjoy watching the froth build up as the coffee settles; sweeten with stevia to taste and top the froth with a dusting of cinnamon or cocoa or both. I like to add a little more stevia to the froth also.
Pour hot coffee into a blender with the cashews and a dash cinnamon and stevia. Pour into two cappuccino cups. Dust with cinnamon, nutmeg, and stevia to taste.
