For a classic Caesar Salad, Tear a bunch of fresh organic romaine lettuce into bite size pieces; top with Freshly grated or shaved parmesan cheese and homemade croûtons*; then use desired amount of dressing to coat, tossing lightly. Serve immediately.
Caesar-like Dressing An alternative to regular Caesar dressing containing healthful additions like kelp, apple cider vinegar, and olives. Try replacing some of the olive oil with flax seed oil for valuable omega-3s. Makes about 1-1/2 cups
12 pitted Greek olives
3/4 cup first-cold pressed extra virgin olive oil
2 tablespoons white wine vinegar
1 tablespoon raw apple cider vinegar
1 tablespoon freshly squeezed lemon juice
3 tablespoons soft tofu
3 teaspoons nama shoyu or organic tamari
1-1/2 teaspoons kelp powder (or other seaweed granules or powder)
1 clove garlic, roughly chopped
Freshly ground black pepper, to taste
Put all ingredients in a blender or food processor and process until smooth. Add a little water if you desire a thinner dressing.
* For croutons, brush olive oil on multigrain bread, sprinkle with granulated garlic and Italian seasoning (optional). Toast lightly, then cut into cubes. Let dry in the oven for 10-15 minutes on warm.
