Apple Crisp & Coconut Whipped Cream/Crock Pot Apple Crisp
Vegan Low-Sugar Delicious! This apple crisp is advanced in nutrition. Never should dessert just be something sweet, but something that contains extra goodness from all sorts of superfoods, whether hidden or not. If you use more apples than called for; even two more---then double the topping ingredients to completely cover the apples.
4-6 large apples, peeled and sliced, about 6 cups
1 tablespoon lemon juice
4 tablespoons maple syrup or agave nectar, divided
1 teaspoon cinnamon
1 tablespoon arrowroot or cornstarch
1/4 teaspoon freshly grated nutmeg (using a microplane grater)
*6 tablespoons extra virgin coconut oil, melted or safflower oil or a combination
Coconut Whipped Cream (below) or Coconut Ice cream (hold the chocolate chips, if desired)
Preheat oven to 325 degrees F.
Toss apples with cornstarch to coat and then lemon juice, 3 tablespoons of maple syrup, cinnamon, and nutmeg. Spread apples evenly into a 13 x 9-inch baking dish.
Combine oats, flour, sucanat, ground almonds, coconut, hemp seeds, cinnamon, cardamom, sea salt, coconut oil, and remaining maple syrup.
Spread mixture over the apples. Bake 35-40 minutes or until nicely browned. There should be some bubbling action in the bottom of the pan.
*Try replacing some of the oil with organic grass-fed butter for that buttery taste, yet still maintaining the healthfulness! For Crock Pot Apple Crisp, follow directions above, but use 7-8 apples and use the arrowroot or cornstarch powder, increase the lemon juice to 2 tablespoons. All other ingredients are the same. I use a large crock pot set on low for 4 hours. You can also set it on high for 2 hours.
Coconut Whipped Cream
1 cup coconut cream or the thickest part of a chilled can of coconut milk. I like Native Forest organic coconut milk (no bpa in the lining of the can)
1 teaspoon vanilla extract
1 tablespoon sucanat or a couple packs of stevia
Whisk ingredients in a wide bowl. Chill until ready to serve. It melts fast upon contact with hot desserts. :) Serve liberally! (unlike the photo above)
