1 bunch fresh kale, main stems, chopped 1/2 cup sun-dried tomatoes, marinated in olive oil 1/2 cup Kalamata or other marinated black olives, sliced 1 small carrot, finely shredded 2 tablespoons extra virgin olive oil Juice from 1/2 lemon 1 tablespoon marinade from olive jar Freshly ground pepper (optional)
Toss all ingredients in a large bowl. Let sit while you prepare other foods for your meal to let the flavors meld. This tastes even better the next day.
