Tabbouleh I like to add a splash of raw apple cider vinegar. It is not authentic at all , but it adds a nice tang.
1-1/2 cups bulgur wheat 1-1/2 cups boiling water 1/2 cup finely chopped green onion (scallions) or red onion 1 bell pepper(red or green), finely chopped 1 organic cucumber, finely chopped 4 organic plum tomatoes, seeded and well chopped 1 bunch organic parsley, larger stems removed, tender stems okay 2 tablespoons finely chopped mint (optional)
Dressing: 1/2 cup extra virgin olive oil juice of 2 lemons (or 1/2 cup--whichever comes first) 1 teaspoon sea salt ( I like RealSalt or Kalahari Desert Salt from Sunfood)
Soak bulgur wheat in the hot water for 2 hours or in the fridge. Fluff bulgur wheat and add veggies and dressing. Chill for at least 2 hours.
