Soak almonds in water so that skins can easily be rubbed off, two to three hours or overnight.
With fingertips, rub skins off almonds and chop finely-unless you prefer some bigger chunks.
In a food processor combine the dates and 1 tablespoon water; process until dates are paste-like. Add sesame seeds, almond butter, coffee extract, salt, cocoa powder, protein powder, flax seeds, cinnamon and coconut oil and process for 1 minute or until fully combined. Stir in almonds.
For each cookie, spoon a heaping tablespoon of mixture, about the size of a golf ball. Form and press into a flat cookie. Wrap in waxed paper, then freeze or refrigerate.
To eat one from the freezer, wait a couple of minutes and it will be ready to enjoy.
