For the ingredients: 1 can (BPA free) organic pumpkin 1 can (BPA free) organic coconut milk 1/4 cup agave nectar 1/3 cup cashews 1 teaspoon guar gum 1 heaping teaspoon molasses 1-1/2 teaspoons pumpkin pie spice 1 serving vanilla whey protein powder Monk fruit extract or stevia extract to sweeten it further optional)
Put all ingredients into a blender. Blend until smooth. Place in the fridge for a few hours. When your'e ready, turn on your ice cream maker, then pour in the pumpkin mixture. Follow manufacturer's instruction for time, etc. If desired add some chunks of chocolate, coconut, or something crust-like for that pumpkin pie Blizzard sorta-feel.
