Makes 8 small or 6 large protein snack bars 1/4 cup Goji berries 1/2 cup raw almonds 1/2 cup packed pitted organic dates (4 large medjool dates works great) 1 tablespoon cocoa powder 1/4 cup almond butter* 1 tablespoon maple syrup or agave nectar 1/4 cup vanilla plant-based protein powder (preferably stevia sweetened)- (I use Vitacost pea protein)
Process goji berries and almonds in a food processor for a minute or two. Add the remaining ingredients; process until mixture is consistent and can be easily formed. Form into a 6-inch log. Cut into 6 or 8 pieces. RE-form each bar if desired. Refrigerate or freeze. These can be eaten right out of the freezer.
