Process the bananas, coconut cream, and protein powder in a food processor until smooth. Pulse in the goji berries. Scoop mixture into a freezer safe container lined with parchment paper if desired. Freeze to desired, yet scoopable consistency. Serve with homemade hot fudge and sprinkle with additional goji berries and/or chocolate chips or coconut and nuts. Option: Substitute some of the coconut milk for fat free plain Greek yogurt if you like. * If goji berries are very soft, chop them very fine and then add to the food processor once the bananas are mostly blended.
Chocolate Goji-Banana Ice Cream
Simply add 3 tablespoons organic cocoa powder to the mixture above and use chocolate protein powder if desired. Top with walnuts or any of the above toppings.
