Preheat oven to 350 degrees F. Coat bottom of 13x9 inch baking pan with healthy cooking spray. Pour oil into bottom of pan and spread. Rinse fish and pat dry. Brush both sides of fish with egg white. Put toasted bread into a mini blender or food processor. Combine flour, bread crumbs, coconut, sea salt, and basil in a small bowl. Coat both sides of fish with the bread crumb mixture. I do this right over the pan one side at a time; pressing in all remaining and dropped crumbs onto the top of fish.
For the sauce: Whisk, mustard, honey yogurt and tarragon in a small bowl. Bake for 15-25 minutes, depending on thickness of fish. Cut and serve into 3-4 portions with sauce.
