Yield: about 1-1/2 cups 3 ounces unsweetened quality dark chocolate, broken into ¼-inch pieces 1-1/2 tablespoons cocoa 1/2-cup agave nectar or brown rice syrup Pinch sea salt 2 tablespoons extra virgin coconut oil or ghee or a combination 2 teaspoons vanilla powder or extract, coconut extract, coffee or almond extract or a mixture 1/8-1/4 teaspoon stevia powder, to taste Combine the chocolate, cocoa powder, ½ cup of water, agave, and salt in a small heavy saucepan. Bring to a simmer over medium heat then lower the heat and boil gently stirring constantly for 1 minute while it thickens. Stir in the oil, flavoring, and stevia, to taste. Remove from heat and cover. Until ready to use or cool completely and store tightly covered in the refrigerator. To reheat, spoon desired amount into a small saucepan and heat on low until melted.
