1 cup cashews, soaked 3-4 hours Juice from 1 lemon (about 2 tablespoons) ½ teaspoon sea salt ½ teaspoon onion powder 1 teaspoon Dijon mustard ¼ - 1/2 cup filtered water for desired consistency
Drain cashews and process them in a food processor until fine. Add lemon juice, salt, onion powder, mustard, and ¼ cup water; process for a couple of minutes or until smooth scraping down the sides as needed. Add more water to make it the mayo-like consistency you’re looking for.
