Carrot Ginger Soup
This soup is great on it's own or as an accompaniment to any veggie salad, and multigrain garlic toast
4 carrots, chopped
1 tablespoon avocado oil
1 onion, chopped
1 tablespoon minced fresh ginger
1 sweet potato, peeled and chopped
1 clove garlic
5 cups vegetable stock
1/4 teaspoon freshly ground pepper
sea salt, to taste
1 teaspoon dried thyme
Cook onion, garlic and ginger in avocado oil until softened and beginning to brown. Add potato, carrots, stock, pepper, thyme and salt to taste. Cook, covered for 10 minutes. Transfer to a blender to puree.
