1/4 cup milled flax seeds 3/4 cup whole wheat flour 3/4 cup oat flour 1/3 cup fructose 2 teaspoons baking powder 1/2 teaspoon baking soda 1/2 teaspoon sea salt 1/4 cup egg whites 1 cup finely chopped apple 1 cup blueberries (or chopped cranberries) 3 tablespoons sunflower seed oil 1/2 cup almond or cashew milk 1/2 cup chopped walnuts (optional) Cinnamon Sucanat
Spray muffin cups with healthy non-stick cooking spray. Preheat oven to 400-degrees F. Whisk dry ingredients in a large bowl; make a well in the center. In another bowl, beat egg, oil and milk. Add to dry mixture. Stir just until blended. Fold in apples, berries and nuts, if using. Batter will be thick. Disperse batter into muffin cups. Dust with cinnamon and sucanat, if desired. Use a ratio of one quarter cinnamon to three-quarters sucanat of any amount. Store in a seal-tight container to use for muffins, toast, etc. Bake for 17-19 minutes or until top springs back when touched. Makes 12.
